Chocolate Cupcakes

Well it only took me four years of having this blog to finally get inspired to post something. My sister in law Natasha  started her own cooking blog, and it was like a wake up call for me. It has been a crazy year. I got my own local TV show called "cooking with Lacey" What a shocker, huh? In honor of my first post I made Dark Chocolate cupcakes, tomorrow I will finish them off. This is a good start for me.

The Ingredients

Melt Butter and Chocolate in Double boiler. I love my B/R/K one I got with my pressure cooker. You can get it online for around $29 and it fits my All-Clad and J.A. Henckels pans.

Combine Sugar, Eggs, and Vanilla
Stir egg mixture into room temperature chocolate mixture

Stir in sifted dry ingredients and sour cream. Do not over mix.

Using a cookie scoop to make sure they are all even place in cupcake liners and bake at 350 for 18-22 minutes

Let cool completely before icing. At least 45 minutes
